Aria Bar Sushi Chef Named Best in Chicago

Byung Kyu Park, the sushi chef for the acclaimed aria bar was just named Chicago’s best sushi chef by New City Chicago.
A six-year veteran of Mirai, the self-trained BK views sushi as an art form and regularly changes his presentation. His balanced progression of tastes begins with sashimi and nigiri and culminating in a signature maki roll that serves as “dessert.”
His signature presentations include aji - horse mackerel - and the daily catch served in a conch shell. Self-seasoned, soy and yuzu complement his fresh-from-Japan fish, and regulars often stop in for his homemade tuna tartare, seasoned with chives, yamaimo and caviar.
