Houston, December 13, 2006. Sylvia Casares-Copeland, chef/owner of Sylvia's Enchilada Kitchen, 12637 Westheimer, will be celebrating the fifth anniversary of her restaurant with her customers on Wednesday, January 17, 2007. For more information, please call 281-679-8300.
"Five years is a big milestone in any business," said Copeland. "I guess in restaurant years, like dog years, it's a life time. That's why we are having a party to thank all our wonderful customers who have driven from all over the city to support us all these years. Come have a piece of cake to help us celebrate!!"
Copeland, a University of Texas at Austin home economics graduate, originally wanted to be a teacher, but her first job after school was working at Uncle Ben's in the their test kitchen. There she learned that when you cut corners to save money or time, you gave up flavor. "There is no gain without loss," she said. "That is why we always cook from scratch, using the freshest, best produce and meats we can find in the marketplace. There are no shortcuts when it come to flavor."
When she opened her restaurant, she wanted to cook the foods of her mother and grandmother, as well as set her apart from other Tex-Mex restaurants. "It took me several years to perfect my enchiladas," Copeland stated. "I used to drive my family crazy making them taste different versions of the same enchiladas time and time again. My greatest thrill is when a customer comes in from Lubbock, and says my enchiladas tastes just like their grandmothers!" Copeland currently has eighteen different enchiladas on her menu.
"My enchiladas reflect the different cooking traditions found on the Texas-Mexico border, in Texas and in Mexico. From McAllen to Lubbock, Crystal City to Sarita, Mexico City to Puebla, these are authentic Tex-Mex, Tex-Tex-Mex and Mexican style enchiladas." It was her attention to the subtleties of their flavors that have made her famous and that have earned her the nickname, "The Queen of Tex-Mex Cuisine."
"My restaurant is my passion, and every dish I serve is a reflection of me."
Sylvia's Enchilada Kitchen is also famous for its vegetarian enchiladas, as well as its Carne Asada, Chili Rellenos, Fish Tacos, Carne Guisada, Menudo and hand-made corn and flour tortillas. On most Saturdays, Copeland teaches cooking classes at her restaurant.
