Bordeaux, France –– May 30, 2007 –– Two young chefs, Sarah Kosikowski of Hubert Keller’s Fleur de Lys Restaurant , and Anne Callaghan of Charlie Palmer’s Aureole Restaurant, both in Las Vegas , were selected by the Jean-Louis Palladin Foundation to discover the gastronomy and wines of the Bordeaux region for one week during Vinexpo in June 2007. The recipients were recently announced at Picholine Restaurant in New York, hosted by Chef Terrance Brennan, Chef de Cuisine Craig Hopson, and Dennis Stella, Tournant, a 2006 award recipient . “The menu was outstanding, showcasing the high quality of the restaurant and its cuisine. The chefs joined us during the meal, and we had a great discussion, an authentic exchange,” said Jean-Pierre Xiradakis, owner of La Tupina Restaurant in Bordeaux. “It was a pleasure to be among this incredible group of talented chefs and winemakers.”

The aim of the internship, sponsored by the Côtes of Bordeaux Wine Council (Premières Côtes de Blaye, Côtes de Castillon, Premières Côtes de Bordeaux, Côtes de Francs, Entre-Deux-Mers and Cadillac) and
La Tupina Restaurant

Jean-Louis Palladin, and to foster an exchange of ideas between American and French culinary life.
“I am honored to be awarded this exceptional internship in the heart of France’s wine country that embodies the true spirit and legacy of Chef Jean-Louis Palladin,” said Anne Callaghan. “I feel that attending this internship in Bordeaux will broaden my perspective and respect for cooking, and continue my life-long education and desire to expand my horizons both personally and professionally. I have always held deep admiration and respect for Chef Palladin’s accomplishments in redefining and modernizing French cuisine in the Americas, and I feel that I will represent the spirit of the foundation’s generosity and shall cherish this incredible experience.”

The foundation’s vision is to create an ongoing tribute to the memory of Jean-Louis Palladin’s culinary leadership, including his unrelenting determination to seek out and use the best ingredients, to mentor talent wherever he found it, and to form a great brotherhood among chefs.
