Cooking: Dry Fluffy Mashed Potatoes and Rice

After mashing your potatoes in a pot, place a double or triple folded paper towel over the top of the pot and return the lid for 10-15 minutes.

The towel will absorb the moisture, leaving you with fluffier mashers.

The same thing works with boiled or steamed rice. Just before your recipe cooking time is to expire, add the paper towel and return the lid.for fluffy, non sticky rice.
