Preparation: Garlic Skin Removal

The common method is to smash the clove under the flat side of a chef's knife. OK for a minced end result, but still tiresome to remove the skins if you are doing a lot of cloves. Soaking them in cold water for 30-40 minutes makes the skins easy to remove. Covering them with hot water for a short time (10-15 seconds) will loosen the skin nicely and they can then be removed with a small knife. Putting them in a microwave oven for 5-10 seconds helps loosen them, but may challenge the texture for some applications.
