Preparation: Scallops (Bay)A small, inshore scallop that is gathered from the Cape of Massachusetts south to Long Island. Firm and sweet, almost "sashimi" grade. The actual availability of this product is limited and unfortunately many other tiny scallops are sold under this name, which by the way is illegal.
The Calico scallop which is fished from as far south as Brazil and north to the southeastern seaboard of the states is often sold as a "bay scallop. "They are not nearly as tender and lack the sweetness of the true "bay scallop." Be sure to ask for the origin of your bay scallops.
