Preparation: Scallops
Fact is...scallops are one of the smelliest seafood available, but that does not indicate a spoiled product. You need a "nose" for scallops. When checking for lack of freshness, smell for an iodine odor.
Don't wash scallops under running water more than necessary, it will reduce their yield.
Grey, cloudy or evidence of slime indicates age. They should be clear and even colored.
