Storing: Mushrooms (Portabella)Portabellas need high humidity. Store in your walk-in on a high shelf next to the evaporator pan of your cooling element.
Cover with a damp paper towel. Do not wash them until ready for use.
The little gills will hold the water and ruin the mushrooms. Never keep them in a plastic bag or sealed plastic container.
